We sell our beef in whole, half and quarter beef sizes. We also offer a Jumbo Ground Beef Package.Click here to see what is included in each size order. We sell our beef by the hanging weight – which is the weight of a side of beef after the removal of the head, feet, and organs, and before being butchered into usable cuts. A side of beef sells for $3.89 per pound. In general, a side of our beef weighs 350lbs but could be more or less depending on the animal.
The yield after butchering the side (half beef) is usually around 55-65% of the hanging weight, depending on the cuts you select. The weight reduction is the result of lost moisture during the aging process (10-14 days), bone removal and the cuts you requested (i.e., with or without bone). A side of beef (105 to 120 sealed packages) will take approximately 3'x3' of space in a medium size chest freezer. Meat will keep fresh for a year or more.
